Tacos

These flavorful Chicken tacos will quickly become a weekly staple in your home!

need a quick, high protein taco recipe that is absolutely delicious? This recipe is it! its packed with nutrients and a little spice, and will leave you smiling!

Ingredients

  • 1 package of chicken breast

  • tbsp of salt

  • 2 tbsp of nutritional yeast

  • 1/2 lemon sliced

  • 2 tbsp coconut oil

  • 1 clove of garlic, minced

  • 1 bell pepper, chopped

  • 1/2 red onion, chopped

  • 1 can of black beans, rinsed

  • 1 can of tomatillo Salsa

  • 2 handfuls of kale

  • tortillas (my favorite are from the brand siete)

RECIPE

  1. Preheat the oven to 415 degrees.

  2. Fill a large pot with water and bring to a boil. once boiled add your chicken, salt, nutritional yeast and lemon. Cook for 12-15 minutes.

  3. Once cooked, pull the chicken. You can use two forks to do this just tearing the chicken with them.

  4. While the chicken cooks, in a large pan add your coconut oil and garlic. Let them simmer for 2-3 minutes.

  5. Then add your onion and bell pepper to the pan and cook down for another 2-3 minutes.

  6. Add your beans and kale to the large pan and cook for 1-2 minutes.

  7. Once the chicken is pulled, add it into the large pan and add the tomatillo salsa as well. Mix until combined.

  8. Place your tortillas on a lined baking sheet and cook for 3-3 1/2 minutes.

  9. Add the taco fillings to half of the tortilla and then fold the tortilla in half.

  10. Cook in the oven for 15-18 minutes, until the tacos are crispy.

  11. Let them cool and enjoy!
