Pulled Chicken
Tacos
These flavorful Chicken tacos will quickly become a weekly staple in your home!

Ingredients
1 package of chicken breast
tbsp of salt
2 tbsp of nutritional yeast
1/2 lemon sliced
2 tbsp coconut oil
1 clove of garlic, minced
1 bell pepper, chopped
1/2 red onion, chopped
1 can of black beans, rinsed
1 can of tomatillo Salsa
2 handfuls of kale
tortillas (my favorite are from the brand siete)
RECIPE
Preheat the oven to 415 degrees.
Fill a large pot with water and bring to a boil. once boiled add your chicken, salt, nutritional yeast and lemon. Cook for 12-15 minutes.
Once cooked, pull the chicken. You can use two forks to do this just tearing the chicken with them.
While the chicken cooks, in a large pan add your coconut oil and garlic. Let them simmer for 2-3 minutes.
Then add your onion and bell pepper to the pan and cook down for another 2-3 minutes.
Add your beans and kale to the large pan and cook for 1-2 minutes.
Once the chicken is pulled, add it into the large pan and add the tomatillo salsa as well. Mix until combined.
Place your tortillas on a lined baking sheet and cook for 3-3 1/2 minutes.
Add the taco fillings to half of the tortilla and then fold the tortilla in half.
Cook in the oven for 15-18 minutes, until the tacos are crispy.
Let them cool and enjoy!
