Black Bean & Sweet Potato Tacos

This easy taco recipe is a weekly staple in my house!

need a quick, plant-based taco recipe that is absolutely delicious? This recipe is it! its packed with nutrients and a little spice, and will leave you smiling!

Ingredients

  • 1 sweet potato, chopped into small squares

  • 1 red onion, chopped

  • 1 bell pepper, chopped

  • 4 tbsp of avocado oil, divided

  • 1 tbsp of chili powder

  • 1/2 tbsp of smoked paprika

  • pinch of salt

  • 1/4 tsp of cayenne powder (more if you like the spice)

  • 1 can of black beans, rinsed

  • 1 cup of salsa of your choice

  • 2 handfuls of kale

  • tortillas (my favorite are from the brand siete)

RECIPE

  1. Preheat the oven to 425 degrees.

  2. on a large sheet pan, cover with parchment paper, and add the sweet potatoes, 2tbsp of olive oil and a pinch of salt.

  3. Let the sweet potatoes cook for 15 minutes.

  4. while the sweet potatoes cook, in a large pot add 2 tbsp of olive oil, onions and peppers, let this cook on medium for 2-3 miniutes.

  5. Add in the chili powder, smoked paprika, and cayenne to the large pot and let it cook for another 2-3 minutes.

  6. Lower the heat to low and add in the black beans, allow these to cook for 3-4 minutes and then add in the salsa and kale.

  7. once the sweet potatoes are finished, add them to the large pot and combine.

  8. On the baking sheet, add however many tortillas to the sheet and place in the oven for 3-4 minutes.

  9. take the tortillas out and add the filling to one side and the fold the tortilla in half. Do this for all of the tortillas and place the sheet back in the oven for 15-17 minutes.

  10. Take the tortillas out and let them cool for 5 minutes then enjoy!

  11. I love the have my tacos with guacamole on top!
