Turmeric Curry
Ingredients
1 Japanese Yam (cut into cubes)
1 clove of garlic
1/2 red onion chopped
1 bell pepper chopped (i like using yellow)
1 tbsp of turmeric
1tsp of black pepper
1 tsp of coriander
1 tspm of chili flakes
1 tbsp of ground ginger
1 can of coconut milk
1 tbsp tomato paste
1 14.5 oz can of diced tomatoes
1 cup quinoa
1 can of chickpeas (rinsed)
2 handfuls of kale or spinach
RECIPE
Place the chopped potatoes in pot of cold water and bring to a boil. Let them cook for about 15-20 minutes or until you can easily stick a fork through them. Drain them well.
In a large pot, add the garlic, onion, peppers, turmeric, coriander, black pepper, chili flakes, and ginger. Heat them on medium heat for 3-4 minutes.
Then add the potatoes, coconut milk, tomato paste, and canned tomatoes. Bring to a boil, then add the quinoa and 1 2/3 cup of water.
Reduce the heat to a simmer, place a lid on the pot and allow it to cook.
Over the next 30 minutes, stir every 5 minutes or so.
Halfway through cooking, add the chickpeas.
With 5 minutes left, add the spinach or kale.
Once the 30 minutes are up you are ready to serve. I like to top mine with sunflower seeds or pumpkin seeds for a crunch!
