Bison Bowls
Ingredients:
1 pack of ground bison meat
¼ cup of water (to add extra protein replace this with bone broth)
4 tbsp of avocado oil
1 bell pepper (chopped)
1 sweet potato (chopped)
1 red onion (chopped)
1/2 lime, juiced
½ tbsp of chili powder
½ tbsp of smoked paprika
1 tsp of cumin
Pinch of salt and pepper
Recipe
Preheat the oven to 400 degrees.
On a lined baking sheet, add sweet potato, ½ red onion, ½ bell pepper, 2 tbsp of avocado oil, salt and pepper and bake for 15 minutes.
In a frying pan, add in 2 tbsp of avocado oil and heat on medium. Add in the bison meat and ground up with a spatula.
Once the bison meat is browned add in the chili powder, smoked paprika and cumin and mix. Add ¼ cup of water, lower the heat to low, and cover the pan. Let this cook until the water is evaporated (8-10 minutes).
In a bowl add a serving of bison, the roasted veggies and any other toppings you want. I love to make a quick mango pico de gallo or roasted potatoes!
